April and May mark the arrival of the "green season," where our organic gardens burst into life. This is the time to look for tender young wild greens, crisp spring onions, and the first harvest of local spinach, which we incorporate into our traditional savory pies and side dishes. The air is filled with the scent of fresh herbs like mint and dill, which become essential components of our spring salads. During these months, our menu reflects the rejuvenation of the landscape, offering lighter, brighter flavors that celebrate the end of winter and the bounty of the Albanian spring.
The Seasonal Peak of Lake Biodiversity Spring at the lake isn't just about the land; it’s a pivotal time for the waters of Shiroka as well. In April and May, the lake’s biodiversity is at its peak, often bringing a variety of smaller, seasonal fish to our docks that are prized for their sweetness and delicate texture. Our chefs take this opportunity to feature "Bleak" (Guca) more prominently—perfectly fried to a golden crisp—alongside fresh lemon and garden-grown garlic. It is also the season when the lake's carp are at their most succulent, making it the ideal time to enjoy a Tavë Krapi enriched with the season’s first ripe spring garlic and onions. Dining with us during these months offers a fleeting, delicious window into the natural rhythm of the lake, where every ingredient is served at the absolute height of its seasonal perfection.
